Our Story
Full Stack BBQ is a husband and wife owned Texas barbeque business. Tim Needham, pitmaster, holds the passion, knowledge, and skill that is needed to create the most tender, tasty and tantalizing brisket. He mastered culinary school and began catering. However, as life does, it hit hard in 2019 with a major stroke leaving Tim unable to walk, talk, sit, or even eat and drink. At this point, his wife, Julie Needham, become his full-time care-taker, and Full Stack BBQ became a lost dream. After years of determination and physical therapy, Tim surpassed the doctor’s recovery expectations, and decided to tackle Full Stack again. When not teaching, you will find Julie alongside, helping him with his dream. If you ask him, he will say, “Happiness is seeing the look in people’s faces when they enjoy what you’ve served them.”
Texas born and raised, Pitmaster Tim prides himself on being a true “stick burner.” Never using pellets, he stays with the smoke to keep the temperature even & low for a slow & steady smoke. He will never inject or marinate his brisket. His sides are his own twists on traditional Texas BBQ sides, that showcase his culinary expertise.
“Full stack” is derived from programming lingo; meaning front and back end, i.e. the whole package: Seen and unseen. Therefore Full Stack’s goal is to be a resourceful and responsible business, offering food truck service, local delivery & catering. As the business grows we are constantly making changes to be less reliant on big businesses, and more on self sustainability and local, smaller businesses. Tim makes his own tallow from the previous services trimmings. He is planning a pesticide-free garden to grow the vegetables used in his recipes. He also has switched to biodegradable service supplies. These are a few examples of how small businesses, likes Full Stack can support and protect our community!
